Potassium carbonate, white crystalline powder. Density 2.428g/cm3. Melting point of 891 ℃, decomposition at boiling point, relative molecular weight of 138.21. Soluble in water, the aqueous solution is alkaline, insoluble in ethanol, acetone, and ether. Strong hygroscopicity, can absorb carbon dioxide and water when exposed to air, and transform into potassium bicarbonate. It should be sealed and packaged. Hydrates include monohydrate, dihydrate, and trihydrate. Potassium carbonate aqueous solution is alkaline. Insoluble in ethanol and ether.


According to China's "Hygienic Standards for the Use of Food Additives" (GB2760-2014), it can be added to wheat flour products, infant and toddler products, and noodle products, with a limit of 60.0g/kg for noodle products. Usually, it is added appropriately when making noodles and Wonton, which can give the product unique flavor, color and toughness (often used together with sodium carbonate, etc.).


Potassium carbonate can be used in glass, printing and dyeing, soap, enamel, preparation of potassium salts, synthesis of ammonia decarbonylation, and also in the color television industry. It is mainly used as a leavening agent in food.

Suitable for drying neutral organic compounds such as alcohols and esters, as well as general alkaline organic compounds such as amines and alkaloids. But it cannot be used as a desiccant for acids, phenols, or other acidic substances.


Alkaline agents and dough improvers, and can inhibit the sourness of noodles, can be used in noodle food, and can be used in moderation according to production needs. Used for producing optical glass, it can improve glass transparency, strength, and refractive index.
