CMC is an off-white powder manufactured from refined cotton or wood. It is a tasteless, odorless, thickener.
Application areas
Dairy products, sauces, desserts, structured fruits and vegetables, Structured meat and fish and others areas.
Usage Levels
The following general guidelines can be given:
Dairy products 0.1-0.5%
Structured meat and fish 0.5-1.5%
Desserts 0.5-1.0%

CMC can either be used as a water slurry or added directly to the recipe ingredients. In both cases it may be dry-blended with other dry substances before addition.
